New World Gin
47% ABV / 94 PROOF
To make our New World Gin, we start with a cane neutral spirit and 12 botanicals. Some are hand-ground daily and others remain whole to appropriately balance the differences in each of the ingredients. We then macerate and distill the spirit in our botanical pot still. Our Distillers make careful head and tail cuts. We bottle it at 94 proof, which allows a better preservation of the botanical oils and presents very well when mixed in a cocktail. We believe this to be one of the best gins available.
COLOR: Silver, Clear.
NOSE: Round, citrus entry, bright & clear. The juniper, coriander and angelica are individually well-established but support each other in a nice balance. Baking spice notes round out the finish.
TASTE: Velvet entry, lots of botanical flavor. Soft, sweet and round. The Gin opens up quickly, coating the whole palate, then shows citrus notes and herbal finish.
This gin plays well in all classic cocktails, especially in a Gin and Tonic, Gimlet, Martinez, or Negroni. A summer favorite of many of our guests is simply Gin and soda water – it is a great replacement for a citrus vodka.
Gin is in more classic cocktails than any other spirit. Our New World Gin was developed to be the perfect cocktail gin. We wanted to include enough Juniper backbone to perform well in all classic cocktails, but include enough bright, citrus notes to remind you that this is a Florida spirit. As we developed our recipe, we employed professional bartenders to help us sample each recipe in multiple classic cocktails.

Recipe:
1 Part St. Augustine Distillery Gin
2 Parts Seltzer
Serve in a Rocks or Highball glass over crushed ice
Garnish with fresh citrus

Summer Bramble
2 cups St. Augustine Gin
1 Bottle Prosecco
2 Cups Florida Blackberries
1 Cup Sugar
1 Cup Water
Garnish Orange & Basil
Directions
Combine blackberries, sugar and water in a sauce pot and bring to a simmer. Cook until berries are soft and sauce starts to thicken. Remove from heat and chill immediately.
In a large pitcher, combine blackberry syrup, Gin and orange slices. Keep chilled.
When ready to serve, open chilled Prosecco and add to the gin mixture. Add basil and ice. Enjoy!
Mango Campari Float
1.5 oz St. Augustine Gin
1.5oz Campari
1.5oz Mango Juice
6oz Pineapple Mango Perrier
2 Scoops Ice Cream
1 Tsp Chopped Candied Ginger
Garnish Orange & Mint Leaves
Directions
Add two slices of orange to the inside of a Collins glass and set aside. Add Campari, Gin, Mango Juice and Pineapple Mango Perrier to a mixing glass and stir.
Pour the mixture into the Collins glass and top with 2 scoops of ice cream.
Add candied ginger and mint leaves for garnish. Enjoy immediately!
Oldest City Raspberry Mule
2oz St. Augustine Gin
1 oz Ginger Beer
1.5oz Lime Juice
3 Raspberries
1 Mint Sprig
1 Candied Ginger
Directions
Muddle a raspberry and lime juice into a mule cup or cocktail glass.
Add the rest of the ingredients and crushed ice.
Garnish with two raspberries, a mint sprig, a lime wheel & candied ginger!
