Mojito
This one is a certified classic. Our take on the famous Cuban cocktail features our Pot Distilled Rum with key lime juice, Bourbon Barrel Aged Honey Syrup, mint, and seltzer for a fresh, flavorful, and fully Floridian beverage.
The mojito has a long and storied history in Cuba. In the 1500s, Sir Francis Drake landed on the island where his men brought aboard ingredients for a traditional medicine: mint leaves, lime juice, sugar cane juice, and “aguardiente de cana,” which translates to “firewater from sugar cane” (known today simply as “rum.”) Since those early days, it’s been enjoyed by millions of people, including the famed author Ernest Hemingway who developed a taste for the beverage while living in Cuba.
Our Pot Distilled Rum adds a brilliant light honey tint to this cocktail, as well as notes of brown sugar and caramel alongside the classic bright sweetness of light rum. Those flavor notes are accentuated by using our Bourbon Barrel Aged Honey in place of a traditional simple syrup, as well as key limes which provide a less tart and more floral flavor than their Persian counterparts.

INGREDIENTS
.75oz St. Augustine Barrel Aged Honey syrup (1:1 honey and water)
1oz key lime juice
6-8 fresh mint leaves
Seltzer
DIRECTIONS
Gently muddle mint leaves in syrup and lime.
Shake all ingredients heavily with ice and dump all into tall Collins or highball glass
Top with seltzer and garnish with expressed mint sprig and lime wedge.
