We’re back with another edition of our dinner party series, and this time we’re featuring our fan-favorite New World Gin! With over 12 herbs and botanicals, this flavorful spirit can bring out the best in seafood, citrus, and much more. Something to Sip: Essential Tonic

Gin and Tonic Recipe

It’s essential for a reason. This classic gin cocktail can be made as a pitcher or single serving

PREPARATION

  1. Prepare a highball glass with ice.

  2. Add gin and mixer, stirring gently to combine. 

  3. Top with seltzer water and garnish with orange peel. Serve.

Something to Nibble: Gin-Tomato Jam & Goat Cheese Crostini

Gin Recipe Appetizer

Bright tomatoes, savory goat cheese, and crispy crostini make this a can’t-miss appetizer.

PREPARATION

  1. Preheat the oven to 350ºF. Arrange baguette slices on a baking sheet and lightly brush each piece with olive oil. Flip over and brush the other side. Bake for 10 minutes, flip pieces, and bake for an additional 10 minutes or until crostini becomes golden brown. 

  2. Add the butter to a skillet over medium-high heat. Melt, and add shallots, reducing heat to medium. 

  3. Add tomatoes and cook for 3-5 minutes. As tomatoes start to soften, add the brown sugar, gin, salt, and red chile flakes. Cook for an additional 10 minutes, using a wooden spoon to crush the tomatoes. 

  4. When the sauce begins to thicken, add the red wine vinegar and oregano. Cook for an additional 1-2 minutes, and remove from heat. 

  5. While the tomato jam cools, spread a thin layer of chevre on each piece of crostini. Top with tomato jam, and serve. 

INGREDIENTS

  • 1 TBSP Butter

  • 1 large shallot, minced

  • 2 cups (1 pint) cherry tomatoes 

  • 2 tablespoons brown sugar

  • ⅓ cup St. Augustine Distillery New World Gin

  • 1 tsp salt 

  • ¼ tsp red chile flakes (optional) 

  • 1 tbsp red wine vinegar

  • 1 tbsp oregano 

  • 4 oz spreadable goat’s milk cheese (like chevre) 

  • 1 french baguette, sliced 

  • ¼ cup extra virgin olive oil

Something Savory: Gin-ger Prawns & Cucumber Gin Salad

Gin Recipe Entree

These two recipes combine refreshing cucumber and warming ginger for a delightful medley of flavors. 

INGREDIENTS

Cucumber Salad

  • 1 large (or 2 medium) cucumber(s), sliced 

  • 3 small campari tomatoes, cut into wedges

  • ¼ cup St. Augustine Distillery New World Gin 

  • Juice from 1 orange

  • ½ cup olive oil 

  • 1 tsp dried basil 

  • Salt and pepper to taste

Prawns

  • 24 prawns or large shrimp, peeled and deveined

  • 4 TBSP butter

  • ¼ green onion or scallions, chopped

  • 3 TBSP pickled ginger

  • 1 TBSP pickled ginger liquid (not essential, but adds great flavor) 

  • ¼ cup St. Augustine Distillery New World Gin 

PREPARATION

Prawns

  1. Remove prawns from shells and set aside

  2. Melt butter in a skillet over low heat. Add green onion and stir until slightly softened. 

  3. Add the prawns, and cook for 2 minutes until just translucent. Add the pickled ginger, ginger liquid, and gin, stirring to combine. 

  4. Cook until prawns are cooked through. Serve warm. 

Salad

  1. In a large bowl or platter with edges, layer the cucumber slices on top of each other. Add tomato wedges on top, and sprinkle with pepper. 

  2. In a bowl or measuring cup, combine gin, orange juice, olive oil, basil, and salt. Whisk or shake until mixture is thick. 

  3. Pour the dressing over the cucumber and tomato slices. Chill for at least 1 hour and serve.

Something Sweet: Gin and Tonic Cheesecake

Gin Cheesecake Recipe

This tangy, citrusy cheesecake is the crossover you never saw coming. 

INGREDIENTS

  • 10.5 oz Lotus Biscoff cookies (or similar digestive biscuits) 

  • ⅔ cup (11 TBSP or 1⅜ stick) butter, melted 

  • 2 limes, washed

  • 5 gelatine leaves, or 2.5 tsp powdered gelatin 

  • ½ cup St. Augustine Distillery New World Gin

  • ½ cup tonic water

  • ⅓ cup caster sugar

  • 2⅔ cups (21.33 oz) cream cheese 

  • 1¼ cup heavy whipping cream

  • ¾ cup powdered sugar 

PREPARATION

  1. Using a food processor, crush cookies until they turn into fine crumbs. 

NOTE: No food processor? Add the cookies to a ziploc bag and crush using a rolling pin, pot, or other heavy/flat object. 

  1. Zest both limes, and add the zest to the cookie crumbs (do not discard limes, you’ll need them later!). Add the butter and stir until fully combined. 

  2. Add the cookie mixture to an 8 inch springform pan and press until they form a compact crust on the bottom. 

  3. Prepare gelatin according to directions on the package. Combine gin, tonic water, and caster sugar in a saucepan over medium-low heat. Heat slowly, stirring until sugar is dissolved. When gelatin is prepared, add to the gin mixture and stir until fully dissolved. Set aside to cool. 

  4. Using a stand or electric mixer, whip the cream until it forms soft peaks. If using a stand mixer, scoop out and set aside. 

  5. With a stand mixer, combine the cream cheese, powdered sugar, and lime juice until the sugar completely dissolves. While combining, add the gin and gelatin mixture and mix until fully incorporated. 

  6. Remove bowl from stand mixer, and gently fold in double cream by hand. Spoon the cheesecake mixture on top of the cookie crust, ensuring the top is smooth. To ensure there are no bubbles in the mix, gently tap the pan on the counter (be careful!)

  7. Place in the fridge for at least 6 hours, preferably overnight. When ready to serve, top with lime zest, lime curd, and serve with a gin and tonic!
