Distiller’s Spotlight: Daniel Joslin
Born and raised in St. Augustine, Daniel has been at our distillery since we distilled Barrel #100 of our Florida Straight Bourbon. Since then, he has earned the title of Head Distiller, where his passion and expertise are on full display in each of our flagship spirits. With top-notch sensory skills, he guides our spirits on their journey from grain to glass and leads our talented distilling team. He’s easygoing, quick to make us laugh, and a truly beloved member of our family!
In advance of our Distiller’s Select Collection arriving on September 14th, we sat down with Daniel to talk about picking his own barrel, how distilling has changed the way he eats, and more. Read on below!
Walk us through your barrel selection process. What qualities stood out about the barrel you chose?
I chose this barrel for its unique flavor and aroma. I distilled this barrel over seven years ago and have been tracking it ever since. Now, it’s finally ready at its peak for some really lucky people to experience. This one is best enjoyed over ice.
Has your job as a distiller impacted the way you enjoy food and drinks in your day-to-day life?
I smell everything before I taste it. People often look at me funny when I smell my food at restaurants or over at a friend's house. Then I have to explain how I smell everything, it's for my job. No one understands except fellow distillers.
How do you celebrate Bourbon Heritage Month?
By bringing everyone I know to the Saint Augustine Distillery for a VIP tour with Dominick. Then they know.
Do you prefer your bourbon neat or on the rocks?
Usually neat! I like to taste all the flavors.
