Most interesting part of what I do: Interacting with different industry experts as we continue to refine our spirits and develop new finishes.
What I love most about the Distillery: Watching this team deliver great customer experiences while continuing to contribute to our community in various ways. I really enjoy the thought that this business venture continues to have a positive impact in many lives - even those that never cross our threshold.
When I’m not at the Distillery, you can find me: On my mountain bike, paddle board, surfboard or boat, then coming home to a family dinner with my wife, Kelly and as many of our kids as we can get to visit!
Philip McDaniel
CEO & CO-FOUNDER
Hometown: Greenwich, CT
Most interesting part of what I do: Working with industry partners to make Florida competitive with other states and modernize prohibition-era laws to put more spirits in the hands of more consumers every day.
What I love most about the Distillery: All the people who believe in our mission and vision to make world class spirits from Florida.
When I’m not at the Distillery, you can find me: Cooking, surfing, swimming, playing a few chords for Wendy and enjoying our spirits, responsibly of course.
Will Hensler
CHIEF OPERATING OFFICER
Hometown: Cocoa Beach, FL
Most interesting part of what I do: Working with industry leaders to continuously improve our product line and guest experience.
What I love most about the distillery: Interacting with guests and hearing their stories of how our products and experiences have personally impacted them and their loved ones.
When I’m not at the distillery, you can find me: Surfing, cooking, reading, or enjoying a glass of Florida bourbon with my wife Kaitlyn.
Ric deMontmollin
VP OF PRODUCTION
Hometown: Tallahassee, FL
Most interesting part of what I do: The process of making spirits is truly magical! Narrowing down a million small variables into meaningful improvements still leaves me in awe. Despite their experience, great distillers never "arrive" and learn every day. It never ceases to astonish me how many ways there are to improve my craft.
What I love most about the distillery: Besides working with an incredible team, I think the look on someone's face when they truly enjoy a spirit we created is the most rewarding aspect of the distillery. Being able to know that our efforts have a positive impact on another person is the best feeling in the world.
When I’m not at the distillery, you can find me: In my free time, I like to be a bar-fly, attend a good show, hang out with my pets Digsby and Ravioli, or just cheer on my favorite soccer team.
Daniel Joslin
HEAD DISTILLER
Hometown: St. Augustine, Florida
Most interesting part of what I do: Taking barrel samples in order to determine the next step of that bourbon's journey on its way to someone's glass.
What I love most about the distillery: The great people I get to work with and meeting all the guests that come through.
When I’m not at the distillery, you can find me: Relaxing at home with my wife and two kids.
Stephanie Campanaro
DISTILLERY OPERATIONS SPECIALIST
Hometown: St. Louis, MO
Most interesting part of what I do: The most interesting part of being the Distillery Operations Specialist is the variety of tasks I manage. Some days I'm more involved in finance and logistical aspects of the Distillery while others are more focused on customer service and assisting in solving operational issues with the team.
What I love most about the Distillery: What I love most about the distillery is the commitment to contributing positively to the community and seeing the transformation of Florida craft spirits from grain to glass.
When I’m not at the Distillery, you can find me: Gardening, shopping for hidden gems, reading, and cruising the Caribbean with my husband.
Amanda Olivero
COMMUNICATIONS DIRECTOR
Hometown: Orlando, FL
Most interesting part of what I do: Capturing the careful craft of distillation and the connective experience of enjoying a cocktail creatively in visual and written mediums to share on various platforms. I love that this industry brings people together.
What I love most about the Distillery: Watching the distillery grow and innovate within the spirits industry and still never lose sight of the commitment to our community.
When I’m not at the Distillery, you can find me: Cooking, baking, skating, going to the beach or hanging with my cats.
Lara Doolan
GUEST EXPERIENCE MANAGER
Hometown: New Orleans, LA
Most interesting part of what I do: Being a voice in the spirits industry for communities that haven't always had a seat at the table.
What I love most about the Distillery: Continued education for our staff so that they can speak more confidently about our spirits and the spirits industry at large.
When I’m not at the Distillery, you can find me: Adventuring around the state with my wife!
Brandi Saldivar
RETAIL STORE MANAGER

Most interesting part of what I do: I enjoy finding and buying new products for the shop so that our guests have fun and useful items to buy when visiting us at the distillery
What I love most about the distillery: The bourbon of course!
