• 2 oz. Red Barrel-Finished Gin
• 0.75 oz. lime juice
• 0.75 oz. simple syrup
• 2 dashes of angostura bitters

The Rested Highball
• 2 oz. White Barrel-Finished Gin
• 0.5 oz. grapefruit juice
Top with soda and garnish with a grapefruit wedge and sprig of Tarragon in a tall Collins glass.
