The Persimmon Cocktail

Holding the Latin name “food for the Gods,” persimmons have been a choice fruit for centuries throughout the world. In the U.S., they are traditionally made into puddings and incorporated into desserts, while other varieties are preferred raw. At the St. Augustine Distillery, however, we prefer our fruit with vodka.

The persimmon cocktail is a great Florida fall beverage due to it’s light sipping qualities combined with spicy notes of winter. A dash of Allspice Dram (a liqueur flavored with allspice bitters) complements the sweetness of the persimmon fruit and St. Augustine’s Florida Cane vodka. A refreshing drink on cool November evening, the persimmon cocktail may establish a new nostalgia for the Florida fall, no matter where the cool winds may blow.

Persimmon Cocktail:

1 ½ oz St. Augustine Distillery Vodka

1 oz persimmon and orange tea puree (see recipe below)

½ oz fresh lemon juice

½ oz Dry Curacao

¼ oz Allspice Dram (a liqueur flavored with allspice berries)

Combine all ingredients with ice and shake. Strain into coupe glass and garnish with star anise.

Persimmon Puree:

8 dried persimmon slices

5 orange pekoe ceylon tea bags

4 tablespoons honey

3 cups water

Simmer water and persimmon until persimmons are soft; add honey and tea bags, steep tea for 2-3 minutes until desired strength. Puree mixture in a blender or food processor until smooth.
