Introducing Our Rum
Discovery Series!

Our Discovery Series is a group of limited release expressions, created during the development of our flagship rum. Each production run was fermented and distilled on-site using select, premium regional sugarcane syrups and molasses in our copper pot stills.

We are excited to share a behind-the-scenes look into the development of our first rum release. We hope you will enjoy this collection of four distinct rums, as much as we did making them.

Discovery Series Rum #1

Our Discovery Series #1 rum is light golden honey in appearance. Clean and clear. The nose of this premium, small batch spirit starts with vanilla with bright, fruity and subtle coconut combined with light, clean wood character, hints of clove and hints of grassy character finishing with toasted notes. The mouth entry is sweet and round with a good mouth-feel, still in the finish. Sweetness continues as you enjoy the first of our Discovery Series rum with light anise ending with a clean pear aftertaste.

Drink Recipe #1 - Riberia Rider

  • 1 ounce fresh lemon juice
  • 3/4 ounce Aperol
  • 3/4 ounce velvet falernum
  • 2 dashes of Angostura bitters
  • Lemon peel

Add all ingredients in a shaker, including bitters. Shake and strain into a coupe glass and garnish with a lemon peel.

Discovery Series Rum #2

Our Discovery Series #2 rum is straw colored in appearance with a brilliant clarity. The nose of this premium, small batch spirit has a bright entry with traces of pear, vinous, resinous sweet oak tannins, vanilla, coconut and a hint of brioche. There are also fleeting citrus notes, as well as Ceylon tea, butterscotch, roasted caramel and a subtlety of cinnamon. The mouth of this spirit is assertive on entry with good structure and a brightness, which balances well with base aromatics and wood. The round mouth feel expands well over the tongue and finishes sweet with notes of pear.

When compared to Discovery Series #1 rum, the second release exerts itself more while the foundation is softer with less bourbon influence.

Drink Recipe #2 - The Tomoka

  • 1 ounce St Augustine Discovery Series 2 Rum
  • 1 ounce Suze
  • 1 ounce Martini and Rossi Bianco vermouth
  • Pinch of salt

Put ingredients in mixing glass, add ice pinch of salt stir and strain into rocks glass.

Discovery Series Rum #3

Our Discovery Series #3 rum is light golden honey in appearance. The nose of this premium, small batch spirit has nice woody notes with hints of smoke and fleeting coconut opening to a fruity and more powerful molasses character with light notes of mineral/shale. The mouth of this spirit has a soft initial entry with warmth growing on the tongue. First notes are of brown sugar and honey with the mid-palate showing slight astringency from the oak concluding sweet with light notes of vanilla.

When compared to Discovery Series #2 rum, the third release possesses more body and roundness in the nose with less fruity character in the mouth. Overall, #3 rum is more substantial and robust.

Drink Recipe #3 - Three Mile Limit

  • .5 oz. St. Augustine Distillery Discovery Rum #3
  • 0.75 oz. cane syrup
  • 1 oz. lime juice
  • 1 dash of bitters

Discovery Series Rum #4

Our Discovery Series #4 rum is light golden honey in appearance while the nose has a sweet, warm and fruity entry with vanilla and coconut. As it begins to open up, light wood components start to outline and give structure to a sweet molasses core. The mouth of this premium, small batch spirit begins with apparent sweetness and body finishing with some nice woody astringency.

When compared to Discovery Series #3 rum, the fourth release is fruitier and more angular in the nose due to the different blend of molasses used. The woody character is also a bit different with rum #4 having more of a bourbon influence, but less overall wood character because of the selection of barrels used in this release.

Drink Recipe #4 - Hot Buttered Rum

  • 3 oz. Discovery Series Rum #4
  • *3 tbsp. butter batter
  • 4 oz. hot water

Scoop the butter batter and top with rum and boiling water. Garnish with cinnamon stick and orange zest.

  • *Butter Batter:

  • 1 lb. unsalted butter
  • 1 lb. powdered sugar
  • 1 lb. light brown sugar
  • 1 quart vanilla ice cream
  • 0.5 tsp. Cayenne pepper
  • 3 tsp. nutmeg
  • 3 tsp. ground cinnamon
  • Let butter and ice cream soften. Mix well all ingredients and put back into freezer to harden.
